果糖基氨基酸氧化酶(FAOX)属于氧化还原酶,是原理:Fructosyl-L-amino acid+H2O+O2→ L-Amino acid+Glucosone+H2O2
含有果糖基的氨基酸或肽,在果糖基氨基酸氧化酶的作用下,被特异性地氧化,生成相应的氨基酸、葡萄糖醛酮和过氧化氢。
